Brahman Country Beef’s Quick Favorite Recipe

With the busyness of the season, one of our go-to recipes include Tex-Mex Fajitas. Cooked with Brahman Country Beef Skirt Steak, it is tender, juicy, flavorful and easy to prepare. Our skirt steak is lean and boneless with high marbling. Overall, skirt steak is best when marinated and grilled or sliced thin and stir-fried. But, no matter how you cook it, it is sure to be a family favorite. Serve these fajitas, recipe compliments of “Beef. It’s What’s for Dinner,” during any night of the week, or on the weekends. You can even create fajita tacos, too!

The ingredients you’ll need:

  • 2 lbs. Skirt Steak, trimmed
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • 12 flour tortillas

Marinade (optional):

  • ½ cup Italian dressing
  • ½ cup apple cider vinegar
  • ½ cup soy sauce
  • 1/3 cup Worcestershire sauce
  • 1/3 cup brown sugar
  • 2 Tbsp. lime juice
  • Dash of garlic powder or fresh garlic, crushed

Preparation:

  1. Combine Italian dressing, vinegar, soy sauce, Worcestershire, brown sugar, lime juice and garlic. Marinate steaks in the refrigerator 6-8 hours or overnight, if desired.
  2. Wrap tortillas in foil, as well as the sliced onion and bell pepper. Place steaks, peppers and onions on grill over medium-hot coals. Grill steaks 4-6 inches from med-hot coals, 8 minutes covered or 10-12 minutes uncovered, turning once. Place tortilla packet on outer edge of grill to warm, turn once. Remove steaks from grill and slice at an angle, across the grain, into ¼-inch thick strips. Serve with tortillas and condiments of your choice.
